Easy Pita Pockets Recipe Video

Ingredients
1 cup warm water
1 package active dry yeast (about 2 tsps)
1 Tbs sugar
2 Tbs olive oil
1 tsp sea salt
2.5 cups all purpose unbleached flour
Directions
Combine yeast, water and sugar in a warmed bowl. Allow
to proof 5 mins. Add salt, olive oil and 1 cup flour and
stir with dough hook on a standing mixer (or by hand)
add 1.5 cups additional flour ( a little more if needed) and stir with
dough hook or by hand until dough forms a ball and comes away from sides of
bowl. Continue to knead 5 mins more. Let dough rest for 20 mins, covered
Cut dough into 8 pieces and roll each into a ball. Cover dough with towel

Wonderful Pita Bread recipe. One of my friends, who currently living in Tel Aviv, once told me that in Israel , it is the custom to eat almost everything in a Pita. Falafel, lamb or chicken shwarma and Kabab, omelets and hummus and other salads in a pita.

They are fun to make on a grill IE barbecue. Sometimes we use our barbie pizza stone when making Lapinja which is a chewey flat bread from the former Yugoslavia. Lapinja is sometimes called Bosnian Bread or Somun. It is a different type of flat bread.
