Pistachio Cookies Recipe
The Pistachio Cookies is one of my favorite cookie preparations that can be served as a snack. Prepared with cognac and nuts, the Pistachio Cookies are best served on get together and parties.
Ingredients
1 cup sweet unsalted butter
6 tablespoons confectioners' sugar
1 egg yolk
2 teaspoons cognac
2 1/4 cups cake flour, sifted
Pistachio nuts
Directions
Preheat oven to 350°F.
Cream butter until very soft and fluffy.
Beat in sugar, then egg yolk and cognac.
Work in flour gradually to form dough.
Chill at least 1 hour.
Break off pieces of dough; form into balls about 1 inch in diameter.
Place on lightly greased baking sheets.
Press pistachio nut into each.
Bake about 15 minutes, until pale golden color.
When cool, sprinkle with confectioners' sugar.
