Pistachio Crusted Chicken with Herb and Mustard Sauce Recipe Video
Pistachio crusted chicken is a very easy recipe, anyone can make. This is a recipe which kids love. The mustard cream sauce bring the whole dish together. Always remember to use fresh pistochios for the right taste.
Ingredients
1 c shelled raw pistachios
1/2 c panko (breadcrumbs)
1/4 c dijon mustard
2 tbsp chopped basil
1 tbsp chopped dill
1 tsp chopped rosemary
45 oz skinless, boneless chicken breast
1 tbsp vegetable oil
Non stick cooking spray
Ingredients for msuatrd cream sauce
1/2 c dry white wine
1/4 c chopped shallots
1 c whipping cream
2 tbsp dijon mustard
1 tbsp chopped basil
1 tbsp chopped dill
Directions
Preheat oven at 400 F.
Grind pistachios.
Add breadcrumbs and blend.
Transfer it to baking dish.
Mix mustard, dill, basil and rosemary.
Coat chicken with mustard mixture.
Dip chicken breasts in nut mixture. Season it with salt and pepper.
Fry the chicken pieces until golden brown.
Transfer the chicken in baking dish.
Bake it until chicken is done.
Pour mustard cream sauce over it.
To make mustard sauce, boil white wine and shallots and simmer until liquid evaporates.
Reduce the heat, add whipping cream and simmer until mixture reduces to about a cup.
Add dijon mustard, basil and dill. Simmer for a couple of minutes.
Season with salt and pepper.
