3 tablespoons olive oil
2 tablespoons wine vinegar
1/2 cup (125 g) tomato paste
salt and pepper
1 teaspoon sugar
1 teaspoon prepared mustard
3 hard-boiled egg yolks, mashed
Directions
Combine oil and vinegar in a saucepan.
Add the tomato paste, salt and pepper and sugar and mix well.
Bring to a boil.
Reduce heat and simmer, uncovered, for ten minutes.
Remove from heat.
Stir in the mustard and egg yolks.
Serve chilled.
