Piquant Chicken Recipe
Ingredients
1 (16-ounce) can stewed tomatoes, undrained and chopped
1 (1 1/4-ounce) package dry onion soup mix
1/2 cup chopped green pepper
2 tablespoons chopped onion
1 1/2 teaspoons dried whole oregano
4 chicken breast halves, skinned
Juice of 1 lemon
1/4 teaspoon salt
1/4 teaspoon pepper
Green pepper rings (optional)
Directions
Combine tomatoes, soup mix, 1/2 cup green pepper, chopped onion, and oregano, set aside.
Dip chicken in lemon juice, sprinkle with salt and pepper.
Place chicken in a lightly greased 13- x 9- x 2-inch baking pan, meaty side down.
Cover and bake at 400° for 10 minutes.
Turn chicken meaty side up, and cover with tomato mixture.
Cover and bake an additional 40 minutes.
Garnish with green pepper rings, if desired.
