Ingredients

 Potatoes4 Large
 400 g / 14 oz can red salmon, drained
 75 ml / 3 fl oz white wine vinegar
 Juice of 1/2 lime
 Black pepper1
 Roughly chopped coriander to garnish

Directions

MAKING
1)Bake potatoes in hot oven.
2)In a bowl, place salmon from can.
3)Flake it using a fork.
4)In a screw top jar, put in wine vinegar, black pepper and lime juice. Shake well.
5)Pour mixture over salmon and let marinate until potatoes are done.
6)Halve the baked potatoes and top with salmon.

SERVING
7)Garnish with chopped coriander and serve hot.
