Piquant Flaked Salmon Recipe
Ingredients
| Potatoes | 4 Large | |
| 400 g / 14 oz can red salmon, drained | ||
| 75 ml / 3 fl oz white wine vinegar | ||
| Juice of 1/2 lime | ||
| Black pepper | 1 | |
| Roughly chopped coriander to garnish | ||
Directions
MAKING
1)Bake potatoes in hot oven.
2)In a bowl, place salmon from can.
3)Flake it using a fork.
4)In a screw top jar, put in wine vinegar, black pepper and lime juice. Shake well.
5)Pour mixture over salmon and let marinate until potatoes are done.
6)Halve the baked potatoes and top with salmon.
SERVING
7)Garnish with chopped coriander and serve hot.
