Pipis Stir Fried In Coconut Milk Recipe
Ingredients
| Peanut oil | 1 Tablespoon | |
| Onion | 1 Medium | |
| Grated ginger | 1 Tablespoon | |
| Garlic | 2 Clove (5gm), crushed | |
| Lemon grass | 1 Tablespoon, finely chopped | |
| Ground cumin | 2 Teaspoon | |
| Ground coriander | 2 Teaspoon | |
| Turmeric | 1 Teaspoon | |
| 1kg pipis, prepared | ||
| Lime juice | 2 Tablespoon | |
| Fish sauce | 2 Teaspoon | |
| Coconut milk | 400 Milliliter | |
| Brown sugar | 2 Teaspoon | |
| 500 g choy sum, chopped coarsely | ||
| Coriander leaves | 2 Tablespoon | |
Directions
1.
Heat the oil in wok or large pan, add onion, ginger, garlic, lemon grass and ground spices; stir-fry until fragrant.

Add rinsed and drained pipis, juice, sauce, milk and sugar; stir-fry until pipis open, discard any that do not open.

Add choy sum; stir-fry until leaves are just wilted.
Serve sprinkled with fresh coriander.
