Piperade Recipe
Ingredients
| 1 green pepper, seeded and sliced | ||
| Corn oil | ||
| 4 tomatoes, peeled, seeded and chopped | ||
| Onion | 1 Small, peeled | |
| Garlic | 1/2 Clove (5gm), crushed | |
| Cooked ham | 3 Tablespoon, chopped | |
| Seasoning | ||
| Butter | 1 Tablespoon | |
| Eggs | 4 standard | |
Directions
Brush the pan with a little oil, put in the vegetable and ham mixture and heat thoroughly.
Beat the eggs lightly with a little salt and pepper and pour into the pan.
Stir occasionally until the mixture has the consistency of soft scrambled egg.
