Pioneer Potato Soup Recipe
Ingredients
| Chicken stock | 1 Quart | |
| Potatoes | 4 , chopped | |
| Carrots | 2 Cup (16 tbs), sliced | |
| Celery | 1/2 Cup (16 tbs), sliced | |
| Onion | 1/4 , chopped | |
| Salt | 1 Teaspoon | |
| 1/2 teaspoon marjoram, dill weed, or cumin | ||
| Pepper white | 1/8 Teaspoon | |
| 1 cup milk or half-and half | ||
| Flour | 2 Tablespoon | |
| Paprika, sliced green onions, crisply cooked crumbled bacon, chopped pimiento, snipped chives or parsley, or grated Parmesan cheese | ||
Directions
1. Combine all ingredients except milk, flour, and garnishes in a large saucepan. Bring to boiling; simmer 30 minutes.
2. Gradually add milk to flour, stirring until smooth. Stir into soup.
3. Bring soup to boiling; boil 1 minute, stirring constantly.
4. Garnish as desired.
