Remove top paper.
For carob dough: Combine flour, carob powder and cinnamon in processor or medium bowl of electric mixer.
Add butter and blend until mixture resembles coarse meal.
Mix egg yolks, honey and vanilla in small bowl.
Add to flour mixture and blend until combined but still crumbly.
Gather dough into ball.
Roll carob dough out between 2 sheets of floured waxed paper into rectangle about 9 x 12 inches.
Brush top of Sable dough with egg wash.
Set carob dough on top, lining up edges and trimming as necessary.
Roll up tightly lengthwise as for jelly roll.
Wrap roll in waxed paper and chill or freeze until firm.
Preheat oven to 350°F.
Cut roll into slices 1/4 inch thick.
Arrange on ungreased baking sheet.
Bake 15 to 20 minutes.
Cool on wire rack.
