Pink Lady Salad Recipe

Ingredients
1 medium apple, peeled, cored and sliced
6 ounces poached firm fish, boned and flaked
1 medium (3-ounce) potato, boiled and diced
2 ounces cooked beets, diced
2 ounces raw onions, diced
1/2 tablespoon diced gherkins
1/2 tablespoon drained capers, diced
Salt and pepper
Dash paprika
1 recipe Basic French Dressing (count 1 tablespoon vegetable oil)
Directions
Combine all ingredients, except French Dressing. Add dressing last and mix gently.
Shape in large coffee cup and refrigerate until ready to serve.
Unmold on lettuce leaves when well chilled.
