1/2 lemon
 
1 Tbs. red currant jelly
 
1/4 pt. Burgundy
 
2 egg yolks
 
2 oz. sugar

Directions

Grate the lemon rind finely and put in the top of a double boiler or in a basin to fit in the top of a saucepan.
Add the other ingredients and mix well.
Cook over boiling water, beating hard all the time with an egg whisk until the mixture is thick and light and has increased in volume.
Pour into individual glass dishes and chill for several hours.
