Pineapple Refrigerator Dessert Recipe
Ingredients
1 env. unflavored gelatin
1 can (20 oz.) crushed pineapple, drained
2 cups heavy cream, whipped
40 graham crackers
1/4 cup finely chopped crystallized ginger
Directions
Soften gelatin in 1/2 cup pineapple syrup in a saucepan.
Stir over low heat until gelatin is dissolved.
Blend into crushed pineapple.
Chill until mixture is slightly thickened, stirring occasionally.
Fold half of the whipped cream into chilled gelatin mixture until evenly blended.
Spread a thin layer of the gelatin mixture on each graham cracker; turn crackers on end and press together to form a loaf.
Spread with remaining whipped cream; garnish with ginger.
Chill about 3 hours.
