1 No. 2 can crushed pineapple
1 or 2 eggs, beaten
2 tbsp. flour
3 to 4 tbsp. sugar 1/2 tsp. salt (opt.)
2 tbsp. lemon juice
1 tsp. lemon peel (opt.)
8 oz. miniature marshmallows
1 c. whipped cream
1/4 c. Maraschino cherries (opt.)
Directions
Drain pineapple, reserving 1 cup juice.
Combine eggs, pineapple juice, flour, sugar and salt in double boiler; cook until thickened.
Add lemon juice and peel.
Cool.
Fold in marshmallows, pineapple, whipped cream and cherries.
Chill overnight.
