Pineapple-Orange Squares Recipe
The pineapple orange squres is a frozen ice cream dessert made with a baked crust of coconut, flour and brown sugar. Made with vanilla ice cream, cream cheese and pineapple, it is further flavored with orange juice concentrate and frozen before serving.
Ingredients
3/4 cup all purpose flour
1/2 cup coconut
1/3 cup margarine or butter, melted
2 tablespoons brown sugar
1 quart vanilla ice cream
1 8-ounce package cream cheese, softened
1/2 of a 6 ounce can (1/3 cup)frozen orange juice concentrate, thawed
1 8 1/4 ounce can crushed pineapple drained
Pineapple slices (optional)
Directions
Stir together flour, coconut, margarine or butter, and brown sugar.
Spread evenly in an 8x8x2 inch baking pan.
Press onto bottom of pan to form a firm, even crust.
Bake in a 325° oven about 20 minutes or till golden.
Cool.
Meanwhile, stir ice cream to soften.
Beat cream cheese and orange juice concentrate till fluffy.
Add ice cream by spoonfuls, beating till smooth after each addition.
Stir in crushed pineapple.
Spoon into prepared crust.
Freeze 8 hours or overnight.
Let stand 10 minutes before serving.
Garish with pineapple slices, if desired
