Pineapple Muffins Recipe

| Canned unsweetened pineapple juice | 1 Cup (16 tbs) | |

| Melted shortening | 1⁄4 Cup (4 tbs) | |
| All purpose flour | 1 3⁄4 Cup (28 tbs) | |
| Baking powder | 4 Teaspoon | |
| Salt | 1⁄2 Teaspoon | |
| Sugar | 2 Tablespoon | |
| Sugar | 2 Tablespoon | |
| Grated orange rind | 1 Teaspoon |

Directions
Add shortening.
Sift flour with 1/4 cup sugar, baking powder and salt, and add to egg mixture.
Stir quickly until dry ingredients are just moistened.
Fill greased muffin pans 2/3 full.
Mix 2 tablespoons sugar and orange rind, and sprinkle over muffins! Bake at 400°F. 20-25 minutes.
Makes 10-12 muffins.
Note: Add 1/4-1/3 cup well-drained crushed pineapple if you wish.
