Pineapple Glazed Rock Cornish Hens Recipe
Ingredients
| Pineapple slices | 1 Can (10oz), undrained | |
| Sugar | 1 Tablespoon | |
| Cornstarch | 1 Teaspoon | |
| Soy sauce | 1 Teaspoon | |
| Ginger | 1/4 Teaspoon | |
| 2 (1 to 11/2 lbs. each) Rock Cornish hens, thawed | ||
Directions
Drain pineapple reserving 1/4 cup pineapple juice.
Place 1/4 cup pineapple juice, sugar, cornstarch, soy sauce and ginger in a 1 cup glass measuring cup.
Microwave 1 minute or until thickened.
Stir every 15 seconds.
Set aside.
Split each hen in half and place, cut-side-down, in a 12x8x 2 inch glass baking dish.
Cover ends of legs and wing tips with small pieces of aluminum foil.
Microwave 7 minutes.
Baste with reserved pineapple sauce and top with pineapple rings.
Microwave 5 to 7 minutes.
Give dish a 1/2 turn during cooking.
Occasionally baste hens with remaining pineapple sauce.
Cover with aluminum foil and let stand 5 minutes.
