All-purpose flour-2 cups, sifted
 
Baking powder-5 teaspoons
 
Baking soda-1/4 teaspoon
 
Salt-1 1/2 teaspoons
 
Sugar-1/2 cup
 
Yellow cornmeal-1 cup
 
Egg-1, slightly beaten
 
Milk-1 cup
 
Pineapple-3/4 cup crushed, drained
 
Shortening-1/4 cup, melted

Directions

MAKING
1)In a bowl, sift flour, baking powder, soda, salt, sugar and cornmeal.
2)In another bowl, mix together egg, milk, pineapple and shortening.
3)Mix the two ingredients and stir just to moisten.
4)Take a greased 8-inch pan and pour the batter into it.
5)Bake in 350 degrees for about 50 minutes.

SERVING
6)Slice the bread into squares and serve hot.
