Pineapple Chicken With Sweet And Sour Sauce Recipe
Ingredients
2 tablespoons vegetable oil
1 green pepper, cut into 1/4 inch strips
1 broiler fryer chicken, skinned boned, and cut into 1/2 inch cubes
18 ounce can pineapple rings, drained and cut into bite size pieces
Sauce
1/2 cup chicken broth
1/4 cup reserved syrup from canned pineapple
1/4 cup dry sherry or white wine
1 tablespoon vinegar
1 tablespoon cornstarch in 2 tablespoons cold water
2 tablespoons orange marmalade
1 tablespoon soy sauce
1 teaspoon ginger root, grated
Directions
Heat oil in wok and stir-fry green pepper 1 to 2 minutes.
Push aside.
Stirfry chicken 3 to 4 minutes, until done.
Return green peppers to the chicken; add pineapple.
Combine sauce ingredients and add to the wok.
Heat and stir until sauce is thickened and clear.
Serve immediately with rice.
