Pineapple-Cheese Open-Faced Sandwiches Recipe
Ingredients
1 cup nonfat cottage cheese
1/2 cup juice-packed canned pineapple, drained
1 teaspoon lemon juice
1/2 cup raisins
4 slices nonfat whole-grain bread
Directions
1. Place cottage cheese and lemon juice in a blender or food processor and process until smooth.
2. Combine smooth cottage cheese with raisins and pineapple.
3. Spread cottage cheese mixture on 4 slices of whole-grain bread.
