Pineapple-Cheese Ball Recipe
I grew up eating this Pineapple-cheese Ball frequently and am happy to share this recipe with you. Seems like European food never lets you down. This recipe of Pineapple-cheese Ball is one such example. Best enjoyed as an Appetizer this recipe was taught to me by a dear friend who also happens to be a great chef. Ingredients
2 pkg (8-oz size) cream cheese, softened
1 can (8-1/2 oz) crushed pineapple, drained
2 cups chopped pecans
1/4 cup finely chopped green pepper
2 tablespoons finely chopped onion
1 tablespoon seasoned salt
Canned pineapple slices
Maraschino cherries
Parsley sprigs
Assorted crackers
Directions
In medium bowl, with fork, beat cream cheese until smooth.
Gradually stir in crushed pineapple, 1 cup pecans, the green pepper, onion, and salt.
Shape into a ball.
Roll in remaining nuts.
Wrap in plastic film or foil.
Refrigerate until well chilled—overnight.
To serve: Place cheese ball on serving board.
If desired, garnish with pineapple slices, cherries, and parsley.
Surround with crackers.
Let guests help themselves.
Makes about 40 appetizer servings.
Note: Any leftover cheese mixture can be reshaped and refrigerated, for use another day.
