Pineapple pieces 2 cups
 
Grated coconut ¾ cups
 
Turmeric powder½ tsp
 
Cumin seeds1 tsp
 
Red chilli1
 
Mustard¼ tsp
 
Butter 2 tsp
 
Water½ cup
 
Sugar3 tbsp
 
Salt as per taste
 
For seasoning
 
Oil 2 tsp
 
Mustard seeds ¼ tsp
 
Green chilies slit 2
 
Urad dal ¼ tsp
 
Curry leaves 4-5

Directions

This vegetable recipe is very easy to prepare, for that first you take a mixer and grind together mustard, chili, cumin seeds and coconut into fine paste.
Take a vessel and boil pineapple pieces in water with turmeric and salt. Cook it until the pieces are tender. Add sugar and stir well. Add coconut mixture. Remove from fire.
Take a pan and heat oil and add urad dal and mustard seeds. After the seeds splutter, add green chilies and curry leaves. Put the seasoning in the pineapple mixture. Then again cook it for 1-2 minutes. Remove from fire and now this free vegetable recipe is ready to serve. Garnish with chopped coriander leaves.

unusual combination of mustard pineapple and coconut..Though similar ingredients are used in one of the south indian recipes viz. pineapple gojju. shall surely try it !
