Pineapple Brownies Recipe
It's hard to stop drooling at the very mention of Pineapple Brownies! Here is my mother's recipe for this. A simple recipe that combines the flavours of vanilla and pineapple. Let me know how it turned out!
Ingredients
Shortening - 1/2 cup
Unsweetened chocolate - 2 squares
Sugar - 1 cup
Eggs - 2, well beaten
Crushed pineapple - 1 flat can, well drained
Vanilla - 1/2 teaspoon
Sifted flour - 1 cup
Baking powder - 1/2 teaspoon
Soda - 1/4 teaspoon
Salt - 1/4 teaspoon
Nuts - 1/2 cup, chopped
Directions
GETTING READY
1) Grease an 8-inch-square pan.
MAKING
2) In the top of a double boiler add shortening and chocolate.
3) Stand over hot water and allow to melt.
4) Blend in the sugar.
5) Take off from the heat and blend in the eggs, pineapple, and vanilla.
6) Sift together the flour, baking powder, soda, and salt.
7) Add into the pineapple mix and blend well.
8) Stir in the chopped nuts.
9) Transfer into an 8-inch-square pan.
10) Place in the oven at 350° F and bake for 35 to 40 minutes.
11) While still warm, cut into squares.
SERVING
12) Top with pineapple pieces and serve.
