Pineapple Upside Down Cake Recipe
Ingredients
3 tbsp. melted butter
1/2 c. brown sugar
1 tbsp. pineapple juice
1 tin drained pineapple slices (arranged)
Maraschino cherries in each hole
Batter:
1/3 c. shortening
1/2 c. white sugar
1 egg
1 tsp. vanilla
1 c. flour
1/2 c. pineapple juice
1 1/4 tsp. baking powder
1/4 tsp. salt
Directions
1. Cream together sugar and shortening until light and fluffy.
2. Add egg and vanilla, and mix well.
3. Sift together the dry ingredients and mix alternately with pineapple juice, beating after each addition.
4. Spread carefully over pineapple mixture in pan.
5. Bake at 350° for 35 minutes.
6. Let stand 5 minutes, then invert on plate.
