Pineapple Topped Sweet Potatoes Recipe
Ingredients
| 2 medium dark-orange sweet potatoes | ||
| Crushed pineapple | 1 /4 Cup (16 tbs), drained | |
| 2 tablespoons sunflower nuts | ||
| Packed brown sugar | 2 Tablespoon | |
Directions
MAKING
1 Heat the oven to 375 degrees farenheit.
2 Scrub the potatoes and prick all over with a fork.Place the potatoes in a shllow baking pan or pie dish (avoid using a glass dish).Bake for 55-65 minutes or until tender.
3 Set the oven control to broil. Cut the potatoes lengthwise in half and mash the cut sides slightly with a fork. Spoon pineapple over cut sides of the potatoes. Top with sunflower nuts and brown sugar.
4 Broil with tops 4 to 6 inches from heat for 2 to 3 minutes or until brown sugar is bubbly.
SERVING
5 Serve immediately.
