Pineapple Sweet Potato Islandia Recipe
Ingredients
| 6 medium sweet potatoes, cooked until just tender peeled | ||
| 1/2 large pineapple, peeled and cut in wedges | ||
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| 3/4. cup brown sugar, packed | ||
| Water | 1/2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Monosodium glutamate | 1/4 Teaspoon | |
Directions
Arrange halved sweet potatoes and pineapple wedges alternatively in well greased baking dish.
Combine remaining ingredients in skillet and simmer 5 minutes.
Pour mixture over sweet potatoes and pineapple, bake at 400°F. for 20 to 25 minutes, turning occasionally to glaze properly.
