Pineapple-Strawberry Sour Cream Parfait Recipe
Ingredients
2 cups cottage cheese
2 small slices pineapple (canned in its own juice) plus 2 tablespoons juice
2 cups strawberries, hulled
1/2 teaspoon strawberry extract
Directions
Make Sour Cream by putting cottage cheese and pineapple into electric blender; blend at low speed until pineapple is crushed and cheese creamed.
Refrigerate until chilled.
Mash half the berries with the strawberry extract.
Empty into bowl; slice remaining strawberries and add to bowl.
To serve, layer even amounts of cheese mixture and strawberries in parfait (or highball) glasses.
