2 pounds lean pork shoulder meat, cut in 1 inch cubes
 
1 (14 ounce) can pineapple chunks, drain and reserve liquid
 
1/4 cup vinegar
 
1 teaspoon ginger

Directions

Combine all ingredients and simmer in nonstick skillet for 1 hour.
Add pineapple liquid if needed.
Chill, skim off fat and reheat.
