Pineapple Peking Duck Recipe

I found out a great way to use Fruits by making some delicious Pineapple Peking Duck. It is an effortless Main Dish. An incredible Pineapple Peking Duck gets its taste from Fruits. Trust me! I am saying that you must try this Pineapple Peking Duck.

Ingredients

 
Pressed Duck:
 
1 duck salt
 
Batter for deepfat frying
 
Pressed duck:
 
1 cup flour
 
1/2 tsp. sugar
 
1/2 tsp. salt
 
Pineapple Sweet-Sour
 
Sauce:
 
1 cup pineapple juice
 
1 cup fresh pineapple chunks
 
1/2 cup vinegar
 
1 6-oz. can tomato paste
 
3/4 cup sugar
 
1 cup water
 
1/2 cup Chestnut flour
 
1/2 cup cracker meal
 
1 egg
 
1 cup ice water
 
2 tbs. peanut oil
 
1 tsp. salt
 
1/2 fresh green pepper, cut in large pieces
 
1/2 small onion, cut in large pieces
 
2 tbs. cornstarch
 
1/2 cup water
 
Sesame seeds

Directions

Season duck with salt, steam for about 1 1/2 hours.
When duck is tender, remove bones.
Place boned duck in shallow greased loaf pan and press until flat.
Cover both sides of duck with mixture of chestnut flour and cracker meal, sprinkle lightly with water.
Steam until flour is cooked and browned, about 1/2 hour.
Remove molded pressed duck from pan and cool.
Cut duck into strips.
Dip strips in batter for deepfat frying.
Fry strips in hot peanut oil until crisp.
Drain on absorbent paper.
Keep warm.
Combine sweet-sour sauce ingredients, except sesame seeds in saucepan and bring to boil stirring constantly.
When thickened, pour sauce over duck, sprinkle with sesame seeds and serve immediately
