Pineapple-Peach Sherbet Recipe

Ingredients
1 medium peach, quartered
2 small slices pineapple (canned in its own juice) plus
2 tablespoons juice
1/2 cup buttermilk
Artificial sweetener to equal 1/4 cup sugar
1 teaspoon raspberry extract
Directions
Puree peach, pineapple, and pineapple juice in blender.
Add remaining ingredients and blend again.
Transfer to ice-cube tray (without dividers) and freeze fruit mixture about 30 minutes, or until the texture of water ices, not frozen into a block.
Use immediately or beat and return to freezer.
Refrigerate for 20-30 minutes before serving.
If mixture freezes into a block, beat lightly.
Serve in 2 stemmed wine glasses, to be licked from a spoon or sipped from a straw or serve in little lettuce leaf cups as a fruit course.
