20 oz. pineapple, packed in juice, drained
 
2 tsp fructose
 
1 cup evaporated skim milk, chilled
 
1 env. unflavored gelatin
 
1 tsp lemon juice

Directions

Puree the pineapple in a blender or food processor.
Add the fructose; stir.
Set aside.
In a mixing bowl, whip the evaporated milk until thick and creamy.
In the top of a double boiler, sprinkle the gelatin over the lemon juice.
Let stand 3-5 minutes.
Stir over hot water until dissolved.
Stir the gelatin into the whipped milk.
Fold the pineapple mixture into the milk.
Spoon into dessert dishes.
Chill until set.
