Pineapple Mint Iced Tea Recipe

1/2 cup tea leaves
 
10 cups boiling water
 
Sprigs of fresh mint
 
2 cups sugar
 
2 cups water
 
Juice of 5 lemons
 
Ice cubes
 
Pineapple spears

Directions

Pour boiling water over tea leaves and steep 3 to 5 minutes.
Strain and add 4 mint sprigs, allow to cool.
Remove mint.
While cooling, simmer sugar and water together to form syrup.
Combine tea and syrup, chill thoroughly.
Add lemon juice.
Pour over ice cubes in tall glass.
Garnish with pineapple spear topped with fresh mint sprig.
