Pineapple Meat Loaf Recipe
Ingredients
| Pineapple can | 1 15 1/4 Ounce, crushed | |
| Eggs | 2 , beaten | |
| Soft bread crumbs | 1 Cup (16 tbs) | |
| Onion | 2 Tablespoon, finley chopped | |
| Soy sauce | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Ground beef | 1 1/2 Pound | |
| Cornstarch | 2 Teaspoon | |
| Prepared mustard | 2 Teaspoon | |
| Catsup | 1/4 Cup (16 tbs) | |
| Few drops bottled hot pepper sauce | ||
Directions
Drain crushed pineapple well, adding water to juice if necessary to equal 1 cup.
Reserve juice for sauce.
In mixing bowl combine eggs, bread crumbs, crushed pineapple, onion, soy, salt, and dash pepper.
Add beef; mix well.
Shape into a loaf.
Place in 11 x 7 1/2 x 1 1/2-inch baking pan.
Bake at 350° for 1 1/2 hours.
Meanwhile, in small saucepan blend together cornstarch and mustard.
Stir in catsup, reserved pineapple juice, and hot pepper sauce.
Cook and stir till thickened and bubbly.
Pass with meat loaf.
