Pineapple Kabobs Recipe
Ingredients
| Wooden skewers, 10 in. long - 8 | ||
| Fresh pineapple chunks, 1 inch long - 32 | ||
| Butter/Margarine | 2 Tablespoon | |
| Light rum or water - 1 tablespoon | ||
| Brown sugar | 1/3 Cup (16 tbs) | |
| Cinnamon | 1 /4 Teaspoon | |
| Maraschino cherries | 8 | |
Directions
MAKING:
1) Place pineapple chunks on skewers (4-each).
2) Arrange the skewer in a baking dish (of 12x8 inch) and keep it aside.
3) Meanwhile, microwave butter for about half to one minutes, till the butter melts.
4) Add rum to the butter and stir in well.
5) Next add brown sugar and cinnamon and mix well.
6) Brush this mixture (about 1/3) on the skewered pineapple chunks).
7) Cover the pineapple chunks in the baking dish with a wax paper.
8) Microwave for about 2 minutes on high temperature.
9) Re-arrange the skewers, so that all sides get evenly done.
10) When the skewers are turned, brush the pineapple chunks with the brown sugar mixture (about 1/3), cover the dish and microwave for another 2 to 3 minutes, till they get hot.
FINALIZING:
11) Brush the pineapple chunks with the remaining brown sugar mixture.
12) Place a cherry on each skewer and cover the dish again.
13) Allow the pineapple chunks to soak in the flavors and till the sugar melts (this will take about 2 to 3 minutes).
