2 cups plus 2 tablespoons water
3 cups sugar
35 ounces well-drained canned pineapple chunks (use 2 1/2 1-pound 4-ounce cans)
1/3 cup kirsch
Directions
Combine water and sugar in medium saucepan and bring to boil over medium-high heat, stirring until sugar dissolves.
Cook without stirring until candy thermometer registers 220°F.
Add pineapple, reduce heat and simmer 1 to 2 minutes.
Remove from heat and allow to cool before adding kirsch.
