8 oz. crushed pineapple in juice
 
3 tsp white grape juice concentrate
 
1 tsp granulated sugar replacement
 
1 tsp cornstarch
 
1 tsp pineapple flavoring
 
1 drop yellow food coloring
 
Base
 
1/2 cup quick-cooking oatmeal
 
1/2 cup all-purpose flour
 
1/4 cup margarine
 
1 egg white

Directions

Filling: Combine pineapple with juice, grape juice concentrate, sugar replacement, and cornstarch.
Stir to thoroughly dissolve cornstarch.
Place over medium heat, and cook until mixture comes to a full boil, stirring constantly.
Boil until mixture is thick and clear.
Remove from heat.
Stir in pineapple flavoring and food coloring.
Set aside to cool Base: Combine oatmeal, flour, margarine, and egg white in a bowl.
Work into a dough, Lightly grease an8x8in.(20x20 cm) baking pan with vegetable oil spray.
Press mixture into the bottom of the pan.
Bake at 350°F (175°C) for 10 minutes.
Remove from oven.
Pour and spread pineapple mixture over the entire surface of the base.
Return to oven and bake for 25 minutes, or until filling is set.
Cool on rack.
