Pineapple Fruit Refresher Recipe
Ingredients
| 1 medium-size pineapple | ||
| Bananas | 2 | |
| 2 peaches or nectarines | ||
| Lemon juice | ||
| 1 cup hulled strawberries | ||
| 1 cup honeydew or casaba melon cubes | ||
| Honey | 2 Tablespoon | |
| Creamy peanut butter | 1 Tablespoon | |
| 1 cup unilavored yogurt | ||
Directions
Cut pineapple in half lengthwise.
Leaving a 1/4 inch-thick shell, cut out fruit from each half, then cut fruit into cubes (see illustrations at left); place fruit in a bowl and set shells aside.
Peel bananas and cut into 1/2-inch-thick diagonal slices.
Peel, pit, and slice peaches (no need to peel nectarines, if used).
Sprinkle bananas and peaches with lemon juice, then add to pineapple along with strawberries and melon; pile into pineapple shells.
Cover and refrigerate for at least 2 hours.
In a small bowl, stir together honey and peanut butter; stir in yogurt until well blended.
Cover and chill until needed.
