Pineapple Delights Recipe

Ingredients
4 pineapple rings
1 cup fresh raspberries
3 large egg whites
2/3 cup sugar, firmly packed
1/2 cup ground almonds
Directions
1 Put 1 pineapple ring in each of four fairly deep sundae dishes.
2 Divide the raspberries equally between the dishes.
3 To make the meringue: place the egg whites in a large grease free bowl, and beat them until they are very stiff.
4 Beat in the sugar, 1 tablespoon at a time, and continue beating until all the sugar has been incorporated. The mixture will be very thick.
5 Using a metal spoon, fold in the ground almonds.
6 Stand each sundae dish on a tea plate and divide the meringue mixture between the four dishes.
7 Microwave all four together on full power for 3 minutes. Serve at once.
