Pineapple Coconut Delight Recipe
Ingredients
| Pineapple | 1 2/3 Cup (16 tbs), crushed | |
| 1 envelope plain gelatin | ||
| Vanilla | 1/4 Teaspoon | |
| 1/2 cup instant nonfat dry milk | ||
| Ice water | 1/2 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon | |
| Sugar | 1/4 Cup (16 tbs) | |
| Shredded coconut | 1/2 Cup (16 tbs), flaked | |
Directions
1.
Drain the pineapple well and add enough water to the juice to make 1 cup of liquid.
Sprinkle the gelatin on the liquid and dissolve over low heat, stirring constantly.

Remove the juice from the heat and add the pineapple and vanilla.
Chill to the consistency of unbeaten egg whites.

Mix the dry milk with the ice water and beat until soft peaks form —3-4 minutes.
Add the lemon juice and continue beating until firm peaks form.
Add the sugar gradually.

Fold the whipped milk into the gelatin mixture and stir in the coconut.
Spoon into dessert glasses and chill well.
