Pineapple Chutney Recipe
Ingredients
| Pineapple | 1 Medium | |
| Raisins package | 1 | |
| Vinegar | 1 1/2 Cup (16 tbs) | |
| Brown sugar - 1 1/2 cups packed | ||
| Red peppers | 3 To taste | |
| Garlic | 2 Tablespoon, finely chopped | |
| Ginger root | 2 Tablespoon, finely chopped | |
| Salt | 1 Tablespoon | |
| Almonds or macadamia nuts - 1 cup chopped | ||
Directions
GETTING READY
1) Skin pineapples and core.
2) Cut into small pieces measuring 4 cups.
MAKING
3) In a large saucepan stir remaining ingredients except nuts.
4) Cook gently for about 30 minutes until pineapple is tender.
5) Stir in nuts and cook until chutney till desired consistency.
6) Stir frequently.
SERVING
7) Pour into sterilized jars and seal with melted paraffin.
