Pineapple Cherry Parfait With Whipped Topping Recipe
Ingredients
| 2 cups canned crushed pineapple, no sugar added, divided | ||
| 1 cup frozen, pitted, sweet cherries, no sugar added, partially thawed | ||
| Cherry extract | 1/2 Teaspoon | |
| Pineapple | 1/2 Teaspoon | |
| Artificial sweetener to equal 4 teaspoons sugar | ||
| Whipped Topping | ||
Directions
Place 1 1/2 cups pineapple in blender container; process until smooth.
Pour into a 1 1/2-quart bowl.
Cut all but 6 cherries into quarters over bowl to catch juice.
Combine cut cherries and remaining pineapple with pureed pineapple.
Stir in extracts and sweetener.
Divide evenly into 6 parfait glasses.
Top each with 1 serving of Whipped Topping and 1 cherry.
Refrigerate or serve immediately.
