Pineapple Brunch Casserole Recipe
Ingredients
1 can (8 ounces) Crushed Pineapple
1 cup biscuit mix
1 cup milk
4 eggs, lightly beaten
6 tablespoons butter or margarine, melted
1 teaspoon Dijon mustard
1/2 teaspoon onion powder
Pinch ground nutmeg
4 ounces cooked ham, diced
1 cup shredded Monterey Jack or sharp Cheddar cheese
2 green onions, finely chopped
Directions
Preheat oven to 350°F.
Drain pineapple.
Reserve 2 tablespoons pineapple for garnish, if desired.
Combine biscuit mix, milk, eggs, butter, mustard, onion powder and nutmeg in blender or in large mixer bowl until smooth.
Stir in ham, cheese, onions and pineapple.
Pour into greased 9-inch pie plate.
Bake in preheated oven 35 to 40 minutes or until set.
Garnish with reserved pineapple, if desired.
