Pineapple Ambrosia Meringue Crown Recipe

2 small slices pineapple (canned in its own juice)
Few drops each orange and coconut extracts
1 egg white
1/8 teaspoon cream of tartar
Dash salt
Artificial sweetener to equal 2 teaspoons sugar
Few drops red food coloring
Directions
Cut pineapple into wedges and arrange them in an attractive individual casserole.
With fingers dot pineapple with coconut and orange extracts.
Beat egg white, cream of tartar, salt, sweetener and red coloring until whites are stiff and stand in glossy peaks.
Pile mixture onto the pineapple to form crown.
Bake at 250° F. for 40 minutes, or until top is well browned.
