Pine Nut Pilaf Recipe

Ingredients
1/2 cup pine nuts
2 tablespoons butter or margarine
1/2 medium onion, chopped
2/3 cup barley
3 chicken bouillon cubes
2 1/2 cups hot water
1/4 teaspoon saffron
3 tablespoons chopped pimiento
Directions
In a medium saucepan, saute pine nuts in butter or margarine until lightly roasted.
Remove the pine nuts, and set aside.
Saute onion until nearly transparent.
Add barley, and saute until lightly browned.
Dissolve bouillon cubes in hot water.
Add saffron.
Combine all ingredients in the saucepan, cover, and let simmer for 40 minutes or until tender.
