Recipe Story

Pinakbet is the signature dish of the "Ilocos" (a philippine northern province). Vegetables are simply boiled with shrimp paste or anchovy sauce and sometimes flavored with bits of pork or shrimp. The authentic "pinakbet" is made using miniature vegetables and is dried than the version shown here. And it is never stirred while cooking instead the pot is shaken to toss the vegetables without making the bitter melon bitter.

Ingredients

 
1 cup cubed pork meat or shrimps (as shown here)
 
vegetable oil
 
2-3 teaspoons shrimp paste to taste
 
or anchovy sauce can be used as a substitute
 
2-3 teaspoon fish sauce
 
1 cup water
 
2-3 pieces long pepper or spanish pepper (washed and uncut)
 
1 medium-size bitter melon, quartered
 
3 pieces round eggplant, quartered
 
5 pieces lady finger, halved
 
7 pieces string beans, quartered
 
4 pieces tomato, sliced
 
1 small onion, sliced
 
1 small ginger, sliced

Directions

I. Brown the pork in a little oil. Set aside.
II. Boil bagoong and water.
III. Put pork/shrimp and the rest of the ingredients.
IV. Simmer until vegetables are done.
