Ingredients

 1 pie crust (regular or graham cracker)
 1 pound tofu cut-up and drained
 Oil1/2 Tablespoon
 1/3 cup plus 2 tablespoons honey
 Cornstarch1/2 Teaspoon
 Vanilla1 Teaspoon
 Crushed pineapple1/4 Cup (16 tbs), drained
 Unsweetened shredded coconut3/4 Cup (16 tbs)

Directions

Blend well all ingredients.
Bake at 350 degrees for 20-30 minutes.
