Pina Colada Tofu Pie Recipe
Ingredients
| 1 pie crust (regular or graham cracker) | ||
| 1 pound tofu cut-up and drained | ||
| Oil | 1/2 Tablespoon | |
| 1/3 cup plus 2 tablespoons honey | ||
| Cornstarch | 1/2 Teaspoon | |
| Vanilla | 1 Teaspoon | |
| Crushed pineapple | 1/4 Cup (16 tbs), drained | |
| Unsweetened shredded coconut | 3/4 Cup (16 tbs) | |
Directions
Blend well all ingredients.
Bake at 350 degrees for 20-30 minutes.
Let cool to set.
