Pimento Cheese Spread Recipe
Ingredients
3/4 cup dry curd or nonfat cottage cheese
2 tablespoons nonfat or reduced-fat mayonnaise
2 teaspoons spicy mustard
1/4 teaspoon crushed fresh garlic
1/8 teaspoon ground white pepper
2 tablespoons finely chopped onion
1 cup shredded nonfat or reduced-fat sharp Cheddar cheese
1 jar (4 ounces) chopped pimentos, drained
Directions
Place the cottage cheese, mayonnaise, mustard, garlic, and pepper in a food processor or blender, and process until smooth.
Add the onion and Cheddar cheese, and process to the desired consistency.
Stir in the pimentos.
Transfer the spread to a serving dish, cover, and chill for several hours.
