Pilaf Florentine Recipe
|Reduced calorie margarine||1 1⁄2 Teaspoon|
|Chopped green onions||1⁄4 Cup (4 tbs)|
|Pine nuts||1 Tablespoon|
|Long grain white rice||1⁄2 Cup (8 tbs)|
|Defatted low sodium chicken broth||1 1⁄4 Cup (20 tbs)|
|Chopped spinach||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||1 Tablespoon|
|Grated lemon peel||2 Teaspoon|
|Ground nutmeg||1 Pinch|
|Ground white pepper||1 Pinch|

Add the onions and pine nuts.
Cook and stir over medium heat for 4 to 5 minutes or until the onions are tender.
Add the rice.
Cook and stir for 2 minutes more.
Stir in the broth, spinach, cheese, lemon peel, nutmeg and pepper.
Bring to a boil, then reduce the heat.
Cover and simmer for 20 to 25 minutes or until the rice is tender and the liquid is absorbed.
Remove from the heat and let stand, covered, for 5 minutes.
Before serving, fluff with a fork.
