Ingredients
2 pounds pike
Salt and pepper to taste
1/2 cup white wine
For Sauce
1 can cream of celery soup
3 tablespoons horseradish
1 teaspoon sugar
1 teaspoon dry mustard
Lemon slices
Directions
Season fish with salt and pepper.
Wrap in cheesecloth.
Put rack in cooker.
Place fish on rack and pour wine over it.
Close cover and put pressure control in place.
When pressure is reached, cook for 4 minutes.
Cool cooker at once under running water.
Remove fish to a heated platter.
To the liquid left in cooker add cream soup (undiluted), horseradish, sugar, and mustard.
Stir until all are heated.
Pour over the fish.
Garnish fish with lemon slices.
Serve.
