Pike With Leeks And Oranges Recipe
Ingredients
| 3 leeks, cut into rounds | ||
| Olive oil | 1 Tablespoon | |
| 2 8 oz pike fillets | ||
| Orange juice | 1 Cup (16 tbs), squeezed | |
| Bay leaves, crumbled | ||
| Tomato | 1 , sliced | |
| 1 orange, peeled, pith removed, sectioned | ||
| Parsley sprigs | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
If using a conventional oven, preheat to 450 °F (230 °C).
In a baking dish, spread leeks.
Season with salt and pepper.
Sprinkle with oil.
Place fillets on top of leeks.
Pour in orange juice.
Sprinkle with bay leaves.
Cover.
Cook in oven 15 minutes or in microwave oven 4-5 minutes, on high.
Let stand 2 minutes.
